It’s safe to say we are absolutely obsessed with Mystic Cheese and the Finback is no exception. Finback is an ode to the times when it took a whole village to make a wheel of cheese! Farmers would pool all of their fresh curds for a few days until they had enough to make a wheel of cheese to age. Mystic cheese is reviving that tradition by using multiple batches of curds to make this wheel. It is crumbly, with a bright citrus burst, and a big savory finish. Paired with this Sour Cherry Spiced Wine Compote really takes you on a flavor journey through time.
